Vegan Shamrock Pancakes
Green blender pancakes you can whip up for an easy, healthy, fun breakfast! Packed full of nutrients and naturally sweetened, these green pancakes are a hit.
- 1 cup rolled oats
- 1 banana
- 1 cup dairy free milk
- 1 tbsp chia seeds
- 1 tbsp ground flax seed
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 cup spinach
- 1 tsp oil for frying
Add all ingredients to a blender and blend until smooth - if too dry add more milk, if too liquidy, add more oats.
Heat oil in a nonstick pan.
Pour batter into pan (about 2-3 inches in diameter, or make shamrock shapes).
When the wet part of the pancake develops holes and no longer looks glossy, flip and cook for the same amount of time on the other side.
Serve with whatever pancake toppings desired.
