Gluten Free Vegan Chocolate Chip Cookies

These chocolate chip cookies will have you asking if they're actually vegan and gluten free! They taste so amazing and have a great texture all without egg, dairy or wheat.

Ingredients
  

  • 2 tbsp ground flax
  • 6 tbsp water
  • 1/3 cup vegan butter
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup gluten free oat flour blend
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • scant 1/2 tsp salt
  • 2/3 cups vegan chocolate chips

Instructions
 

  • Preheat your oven to 375 degrees F and prep a cookie sheet with parchment paper.
  • In a small bowl, mix the ground flax and water and let sit for 5 to 10 minutes to form a flax egg.
  • Cream the vegan butter and sugars together in a medium bowl.
  • Add the vanilla and flax egg and combine.
  • In another mixing bowl, combine the dry ingredients together (gf oat flour, baking soda, baking powder, and salt).
  • Add the dry mixed ingredients to the wet ingredients until combined.
  • Mix in your vegan chocolate chips.
  • Form your dough into golf-ball sized balls and arrange on your prepared cookie sheet.
  • Bake for approximately 10 minutes.
  • Allow to cool for a couple minutes before transferring to a cooling rack and enjoy!
